Ugh, the Starbucks lemon loaf. It’s stolen my heart many a time. I usually find that I’m salivating by the time I get to the counter and place my order, because it’s just so.damn.delicious.
That is, until I plugged it into My Fitness Pal and saw the calorie count. Heart attack anyone? I’m on a bit of a weight loss kick (a pre-emptive solution to the fact that I will be eating everything in sight when I reach Paris in two weeks), and 500 calories is just too many for me to spare on an afternoon snack.
So, I scoured the internet and found a homemade, lesser calorie version. And boy is it yummy. It’s bursting with that lemon flavour we all love and the loaf itself is moist, dense, and fluffy. Likely something to do with the sour cream.

Ingredients for the Loaf:
– 3 eggs
– 1 cup sugar
– 1 cup sour cream (I used light sour cream)
– 1/2 cup canola or vegetable oil
– 2 Tablespoons lemon zest
– 1 to 2 Tablespoons lemon extract (DO NOT SUBSTITUTE FOR ANYTHING ELSE)
– 1 1/2 cups flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
Drizzle: 1/4 cup icing sugar + 1 Tablespoon lemon juice
Step One: Whisk the eggs, sugar, and sour cream until blended.
Step Two: Pour in the oil and continue to whisk.
Step Three: Add in the lemon zest and lemon extract – whisk again. Note: I used 2 Tablespoons lemon extract, but if you’re worried, try adding it 1/2 Tablespoon at a time.
Step Four: Add the flour, baking powder, and salt and whisk just until blended.
Step Five: Pour it into a greased loaf pan.
Step Six: Bake at 350F for 50 minutes.
Step Seven: Remove, cool, and drizzle.
The perfect treat for an afternoon snack, book club meeting, or even a casual dessert.
