Tomorrow is the big day. The long-awaited Buttermilk Fine Waffles finally opens up shop. Which means: All.Day.Waffles.
What is buttermilk? It’s a waffle house. Plain and simple, nothing else. Just waffles, freshly squeezed orange juice, and decadent toppings. It’s the creation of Sam Friley and I’ve been anxiously waiting for this day to come ever since the first time I spotted their building permit in the window.
You might have heard about Village Ice cream (and if not, come on – are you living under a rock?!), founded by Sam’s brother. Well, Buttermilk has the same take on food. Provide the public with one option and kill it.
Saturday night I was invited to their opening party to test out the menu, sample the juice, and interact with other Calgarians. It was a little bit of a who’s who of my Instagram news feed. Foodies, media, bloggers, branding specialists, entrepreneurs…you get the picture.
Drinks flowed and waffle irons began to heat up.
We made our way through the door and into the space. For now, there were a few tables and chairs and enough space for the DJ Booth. But, come tomorrow, it will be full of harvest-style tables where you can pull up a chair, enjoy a waffle, and perhaps catch a film projected onto the wall. Sam’s idea behind Buttermilk was that it’s a place where people of all ages can gather – building a better community one shop at a time.
So let’s get down to business. The waffles. These bad boys have stole my heart and I am going to go out on a limb here and tell you that they are the best in the City. Seriously.
The recipe is homemade. The waffle is light and airy. And, the waffle exterior has a bit of a crunch.
Throw on a bunch of creative but thoughtful toppings and you’ve got an experience that will keep you coming back.
We started out with the classic waffle – butter and Quebec maple syrup. One bite in, we both looked at each other and said we should’ve ordered two. Simple, yet so utterly delicious.

We grabbed a few more drinks – screwdrivers for Cole and freshly squeezed OJ for me – and took a little bit of a rest.
We enjoyed the music as we watched the crowd devour waffle after waffle. Each one coming out hot from the irons.
The OJ is seriously so sweet and refreshing – not bitter at all. But, it does have pulp in it.
After massive food-envy, we made our way back into the line up – set on ordering the other two waffles.
Lemon curd with crumbled goat cheese and finely chopped basil. You know the filling in a lemon meringue pie? The curd tastes just like it – seeping into the waffle holes and dripping down the sides. Yuuum. It was easily the crowd favourite.
And my personal favourite – the cinnamon roll waffle or the “Rachel”. Drenched in cream-cheese icing, cinnamon simple syrup, and topped with a pile of pecans. It is the most decadent waffle I’ve ever had.
Let’s just look at those toppings once more..
The menu will be somewhat limited – with the three waffles above and likely a couple other flavours. I’m told there will be a couple sides of Village Ice Cream that you can pop onto your waffles…and I really do hope so because that would just be heaven. *cue angels singing*
They open tomorrow on 17th Ave – show some love and stop on by! Grab a waffle and sit and chat with your neighbours, or order it “to go”. Buttermilk is open 9am to Late.
Breakfast in bed just got that much easier friends.
