Do you ever feel like you need to spice up your usual dinner routine? Sometimes the classic chicken or pork dish just gets so blah.
Sunday night the sun was shining, warm air was blowing, and I really didn’t feel like doing the dishes or turning on the oven. Eager for a home cooked meal and looking for something healthy but different, I grabbed a bunch of fresh veggies and whipped up a quick teriyaki marinade. The BBQ was calling my name – Shish kabobs it was.
The marinade is super easy (and not to mention delicious) – the soy, vinegar, and ketchup really give it a popping sweet and sour flavour. If you’re in a rush, you can stir it up, lather it on, and head to the grill. However, if you’ve got some time on your hands and you really want tender, juicy meat, use it as a marinade and reserve a bit for dipping later on.
I had more than enough for 8 kabobs – had I been a little more stringent in pilling everything on, I easily could have made 10.
You will need:
– 1 cup ketchup
– 1 cup white sugar
– 1 cup soy sauce
– 2 teaspoons garlic powder
– 2 teaspoons ground ginger
– 1 top sirloin steak
– 2 chicken breasts
– 1 red pepper and 1 orange pepper
– 1/2 of a white onion (or use pearl onions if you can find them)
– 1 zucchini
– several mushrooms
– several red potatoes
PS – This is just a guideline, feel free to get creative!
Note: I had metal skewers on hand, but you can also use wooden skewers. If you are planning on using wooden ones, make sure you soak them in water first.
Step One: Blend the marinade ingredients.
Step Two: Chop your meat into bite size pieces (about 1 inch by 1 inch). Place the meat into a container and cover with marinade. Let them soak for a few hours. [Or, brush the marinade on and then proceed to assembly).
Step Three: Cut your veggies into bite size pieces.
Step Four: Assemble!
Step Five: Grill for approximately 10 minutes, rotating your skewers every 2 minutes.
They’re super quick and low fuss! Pair with some homemade fries (I’ll post a recipe next week) or a salad.
