This recipe is dedicated to all of you who come home after a busy work day and really don’t feel like cooking dinner. I have been guilty of that far too often – and usually it results in ordering a pizza, eating it in its entirety, and then feeling like a bum.
But, never fear! This recipe is easy, quick, and you will easily have most (if not all) of the ingredients on hand. As long as you have milk and sour cream, you can pretty much wing it.
Plus, this version is healthy and low cal. So eat up.
– pasta noodles of your choice (I prefer penne lately)
– 2 Tablespoons butter
– 2 teaspoons garlic (minced)
– 1 1/2 cups milk – 2% is recommended, but you can certainly use skim (it will just be less creamy)
– 1 1/2 Tablespoons flour
– 1/3 cup parmesan cheese (grated)
– 1/2 teaspoon basil (dried)
– 1/4 cup light sour cream
– 3/4 cup peas (cooked)
– 2 Tablespoons parsley (dried)
– a dash of salt & pepper
Plus feel free to add chicken or tuna if you need a little meat.
Step One: Melt the butter in a medium saucepan on low-medium heat. Add the garlic and stir.
Step Two: Add the milk and flour and stir until smooth. The flour will act as a thickener. Raise to medium heat and stir for 4-5 minutes until your sauce is thick and bubbling.
Step Three: Reduce back to low heat, stir in parmesan cheese, basic, parsley, salt and pepper. Stir for 2 minutes.
Step Four: Add peas and sour cream. Stir until blended.
Pour it over your pasta noodles, mix, and you’re good to go!
