Herbes de Provence & Honey Mustard Chicken

Looking for a quick & easy recipe for dinner tonight?

A couple weeks ago I purchased my first bottle of Herbes de Provence. This particular bottle is a blend of spices, used for chicken, pork, or veggies. As always, I was excited to try it out and see how it tasted.

I like this recipe because it is pretty simple. It is easy to whip up on an evening after work and most of the ingredients are likely already in your pantry.

The sauce is sweet (as expected) but I found the red wine vinegar gave it a bit of a kick.

My chicken of choice was chicken legs, but you could also use drumsticks, thighs, or chicken breasts.

– 4 Chicken legs (or about 6 chicken drumsticks) – FYI: I usually remove the skin

– 1/8 cup honey

– 1 Tablespoon red wine vinegar

– 1 Tablespoon Dijon mustard

– ½ teaspoon garlic (minced)

– ½ teaspoon Herbes de Provence

– salt and pepper to taste

Step One: Whisk the ingredients (except for the chicken!) in a bowl.

Step Two: Spread the chicken out into a baking pan and spoon the sauce making sure to cover each one.

Step Three: Bake at 400F for 20 minutes, then baste the chicken with the sauce in the pan, and bake for 20 additional minutes.
